Hardly any compound in nutritional science has attracted as much research interest in the last three decades as sulforaphane. The special thing about it: The highest known concentration is not found in mature broccoli, but in small, tender broccoli sprouts – which can easily be grown at home.

In this article, we'll look at what sulforaphane is chemically, what science has researched so far, and why broccoli sprouts play such a special role when growing them at home.

What is sulforaphane?

Sulforaphane is a secondary plant compound – more precisely an isothiocyanate – that occurs naturally in Brassica vegetables: broccoli, Brussels sprouts, cabbage, and kohlrabi contain it, but in very different amounts.

The compound does not form directly in the plant, but only through an enzymatic reaction: When plant cells are damaged – for example, by chewing or crushing – the precursor molecule glucoraphanin stored in the cells meets the enzyme myrosinase. This reaction produces sulforaphane.

Important: Excessive cooking deactivates myrosinase. Brief blanching (below 70 °C) or eating raw best preserves the conversion.

What is science researching?

Research on sulforaphane is extensive and dates back to the early 1990s. Here are some of the most cited studies and what they investigated – always in the sense of scientific understanding, not as health promises:

1. The original study: Talalay & Zhang (1992)

At Johns Hopkins University School of Medicine, Zhang et al. (1992, PNAS) investigated which compounds in vegetables induce Phase II enzymes in the body. These enzymes play a central role in the body's detoxification system. Sulforaphane proved to be a potent inducer of these enzymes in these investigations – a discovery that launched the entire research direction.

2. Broccoli sprouts as a concentrate: Fahey et al. (1997)

In one of the most well-known studies on this topic, Fahey, Zhang, and Talalay (1997, PNAS) analyzed the glucoraphanin content in various developmental stages of the broccoli plant. Their finding: 3 to 5-day-old broccoli sprouts contained 10 to 100 times higher concentrations of glucoraphanin than mature broccoli – with a fresh weight that can be consumed practically daily.

This study laid the scientific foundation for broccoli sprouts to be considered an efficient source of glucoraphanin / sulforaphane.

3. Clinical pilot study: Yanaka et al. (2009)

In a Japanese clinical pilot study, Yanaka et al. (2009, Cancer Prevention Research) investigated the effect of daily consumed broccoli sprouts in subjects with Helicobacter pylori infection. After 8 weeks, altered biomarker values for oxidative stress were measured in the group that consumed broccoli sprouts – an area that is being intensively researched in basic science.

4. Current research fields

Current scientific literature examines sulforaphane in numerous contexts: Nrf2 activation (a transcription factor of the cell protection system), neuronal protective effects in animal models, inflammation-related biomarkers, and metabolic parameters. This is an active field of research – most studies are in preclinical or early clinical phases.

Why sprouts – and not mature broccoli?

The question is obvious: Can't I just eat more broccoli?

Theoretically yes – but the concentration makes the difference. As the Fahey study showed, one tablespoon of broccoli sprouts (approx. 10 g) contains a similar amount of glucoraphanin as about 100-150 g of mature broccoli. This makes sprouts an exceptionally efficient source – compact, fresh, and easy to grow yourself.

In addition, freshly germinated seeds still contain fully active myrosinase, as the cells have not been stressed by storage or heating. The conversion of glucoraphanin to sulforaphane takes place efficiently during chewing.

Growing broccoli sprouts yourself – here's how

You only need three things: organic broccoli sprouting seeds, a sprouting jar with a sieve lid, and water.

Step-by-step instructions

Day 0 - Soaking: Put 1-2 tbsp of broccoli seeds into a sprouting jar. Fill with water, soak for 8-12 hours. Then drain well.

Day 1-5 - Germinating: Place the jar at an angle (sieve opening downwards) in a bright place without direct sunlight. Rinse and drain in the morning and evening – this prevents mold and keeps the sprouts fresh.

Day 3-5 - Harvesting: As soon as the sprouts are 3-5 cm tall and show the first tiny leaves, they are ready to harvest. Then store in the refrigerator and use within 3-4 days.

  • What do broccoli sprouts taste like? Mildly spicy, slightly mustardy – more pleasant than mature broccoli. Good as a topping on salads, in wraps, or on avocado toast.
  • Can I cook the sprouts? Possible, but not recommended if you want to use the full glucoraphanin content: Myrosinase is inactivated above 70 °C. Raw or briefly blanched is better.
  • How long do broccoli sprouts keep? In the refrigerator (well-dried) about 3-5 days. Dryness is important – moisture accelerates spoilage.
